How often should I really be posting to grow? I see advice ranging from once a day to once a week.

Post as often as you can without the quality dropping, which for most creators lands around four to seven times a week. Consistency beats volume: three good posts every single week beats ten one week then nothing for two. The algorithm rewards regular finishable content, not a flood of filler that tanks your average watch time. Pick a cadence you can hold for months, batch it so you are not scrambling, and only raise it once it still feels easy.

Post as often as you can keep it good. The moment quality drops, growth does too.
